The Culinaire in Bexhill is a new concept in modern South Indian food with a British sensibility. A Dosa based menu celebrating English, ethically sourced ingredients. Kuldeep Raj has already built a strong reputation in Rye as an exemplary chef and this will be his first solo project. I worked with the team on the development of a core brand and advised on the refurbishment of the building, formerly a Thai restaurant. It needed complete refurbishment and re-imagining, and demanded an identity that set it apart from the competition.
